| 1 lb. lobster meat, chopped

½ tsp. tarragon |
| ¼ c. finely chopped onion
|
1 c. pure mayonnaise
|
| ½ c. finely chopped celery
|
1 tsp. lemon juice or white wine
|
| 1 tbsp. chopped green pepper
|
white pepper to taste
|
| 1 tbsp. chopped parsley
|
|
Place all ingredients
in a bowl and blend well. Serve on a bed of lettuce or in
rolls. Serves 4.
