| 3 c. lobster meat, cut up

1/3 tsp. onion juice

| 1 pt. light cream
|
1 tsp. salt |
| 1 c. soft bread crumbs
|
dash of pepper |
| 2 eggs |
2 tbsp. butter |
| 1 tsp. prepared yellow mustard
|
1 c. butter cracker crumbs
|
| 1 tsp. lemon juice
|
|
Heat cream to almost boiling and add bread crumbs and
finely cut up lobster meat. Beat eggs slightly and mix with
mustard. Add first mixture to it and cook until thickened,
stirring constantly. Add remaining seasonings and
butter. Put in a greased baking dish and cover with butter
cracker crumbs.
Bake in a 400º oven for 10
minutes just to brown the crumbs. Yields about 6
portions.
